Amla Ki Chutney

Amla Ki Chutney, or Indian Gooseberry Chutney, is a tangy and flavorful condiment made with fresh amla (Indian gooseberry) and various spices.

Ingredients:

  • 1 cup fresh amla (Indian gooseberry), washed and chopped
  • 1/2 cup jaggery or sugar (adjust to taste)
  • 1 tablespoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 2-3 dry red chilies, broken into pieces
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Water (as needed)
  • Chopped coriander leaves for garnish (optional)

Instructions:

  1. Prepare Amla:

    • Wash and chop the amla, removing the seeds.
  2. Cook Amla:

    • In a pan, heat a little water and cook the chopped amla until they are soft. You can cover the pan to speed up the cooking process. Once cooked, set aside.
  3. Make Amla Paste:

    • Blend the cooked amla to a smooth paste using a blender or food processor. Add a little water if needed.
  4. Prepare Spice Mix:

    • In a small bowl, mix together turmeric powder, red chili powder, and salt.
  5. Cooking the Chutney:

    • In a pan, heat oil. Add mustard seeds and cumin seeds. Let them splutter.
    • Add broken dry red chilies and asafoetida. Sauté for a few seconds.
  6. Add Amla Paste:

    • Pour in the amla paste and the prepared spice mix. Mix well.
  7. Add Jaggery or Sugar:

    • Add jaggery or sugar to the pan. Adjust the sweetness according to your taste. Stir until the jaggery/sugar dissolves.
  8. Simmer:

    • Simmer the chutney on low heat until it reaches your desired consistency. Stir occasionally.
  9. Check Seasoning:

    • Adjust salt and spice levels if needed.
  10. Garnish:

    • Garnish with chopped coriander leaves if desired.
  11. Cool and Store:

    • Allow the Amla Ki Chutney to cool. Once cooled, transfer it to a clean, dry jar for storage.
  12. Serve:

    • Amla Ki Chutney is ready to be served. Enjoy it as a side with meals or snacks.

Tips:

  • For a smoother chutney, remove the seeds from the Amla before blending.
  • You can adjust the amount of spices and jaggery according to your taste preference.
  • To add a smoky flavor, roast the Amla slightly before blending.
  • These chutneys are a great source of Vitamin C and other nutrients.
