Apricot Jam

Making homemade apricot jam is a delightful way to enjoy the natural sweetness of apricots.

Ingredients:

  • 4 cups fresh apricots, pitted and chopped
  • 3 cups granulated sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest (optional)

Instructions:

  1. Prepare the Apricots:

    • Wash, pit, and chop the fresh apricots. You can leave the skin on for added texture or peel them if you prefer a smoother jam.
  2. Combine Ingredients:

    • In a large, heavy-bottomed pot, combine the chopped apricots, granulated sugar, lemon juice, and lemon zest.
  3. Cook:

    • Place the pot over medium heat, stirring to dissolve the sugar. Once the sugar is dissolved, bring the mixture to a boil.
  4. Skim Foam:

    • As the mixture boils, a foam may form on the surface. Skim off this foam using a spoon.
  5. Simmer:

    • Reduce the heat to medium-low and let the mixture simmer. Stir occasionally to prevent sticking.
  6. Test for Setting Point:

    • After about 15-20 minutes of simmering, test the jam's setting point. Place a small amount on a chilled plate; if it wrinkles and holds its shape when touched, it's ready.
  7. Remove from Heat:

    • Once the jam reaches the desired consistency, remove it from the heat.
  8. Cool and Store:

    • Allow the jam to cool for a few minutes.

    • Ladle the hot jam into sterilized jars, leaving about 1/4-inch headspace. Clean the rims of the jars with a damp cloth.

  9. Seal Jars:

    • Place sterilized lids on the jars and screw on the metal bands until they are fingertip-tight.
  10. Water Bath (Optional):

    • For added preservation, you can process the sealed jars in a boiling water bath for about 5-10 minutes.
  11. Cool Completely:

    • Allow the jars to cool completely on a clean, dry towel.
  12. Store:

    • Once cooled, store the Apricot Jam in a cool, dark place. Refrigerate after opening.

  • For a smoother jam, you can puree some or all of the mixture after cooking.
  • Feel free to adjust the amount of sugar to your taste preference.
