Aloo Sabzi
Aloo Sabzi is a simple and flavorful potato curry often enjoyed with roti, paratha, or rice in Indian households.
Ingredients:
- 4 medium-sized potatoes, peeled and diced
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 1 tablespoon ginger-garlic paste
- 2 green chilies, finely chopped (adjust to taste)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- 2 tablespoons cooking oil
Instructions:

Sautéing:
- Heat oil in a pan. Add cumin seeds and mustard seeds. Allow them to splutter.
- Add finely chopped onions and sauté until they become golden brown.

Add Ginger-Garlic Paste:
- Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.

Add Tomatoes:
- Add chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.

- Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

- Add diced potatoes and sauté for a few minutes until they are coated with the masala.

- Cover the pan and let the potatoes cook on low to medium heat. Stir occasionally to prevent sticking.

- If needed, add a little water to the pan. Simmer until the potatoes are fully cooked and have absorbed the flavors of the spices.
