Aloo Sabzi

Aloo Sabzi is a simple and flavorful potato curry often enjoyed with roti, paratha, or rice in Indian households.

Ingredients:

  • 4 medium-sized potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • 2 tablespoons cooking oil

Instructions:

  1. Sautéing:

    • Heat oil in a pan. Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add finely chopped onions and sauté until they become golden brown.
  2. Add Ginger-Garlic Paste:

    • Add ginger-garlic paste and sauté for a minute until the raw aroma disappears.
  3. Add Tomatoes:

    • Add chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
  4. Add Spices:

    • Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.
  5. Add Potatoes:

    • Add diced potatoes and sauté for a few minutes until they are coated with the masala.
  6. Cooking:

    • Cover the pan and let the potatoes cook on low to medium heat. Stir occasionally to prevent sticking.
  7. Simmer:

    • If needed, add a little water to the pan. Simmer until the potatoes are fully cooked and have absorbed the flavors of the spices.
  8. Garnish:

    • Garnish with fresh coriander leaves.
  9. Serve:

    • Aloo Sabzi is ready to be served. Enjoy it with roti, paratha, or rice.
