Ingredients:

  • Potatoes (boiled and cubed) – 4 medium-sized
  • Onions (finely sliced) – 2 medium-sized
  • Tomatoes (chopped) – 2 medium-sized
  • Green chilies – 2 (slit lengthwise)
  • Ginger-garlic paste – 1 tablespoon
  • Turmeric powder – 1/2 teaspoon
  • Red chili powder – 1 teaspoon (adjust to taste)
  • Coriander powder – 1 teaspoon
  • Garam masala – 1/2 teaspoon
  • Mustard seeds – 1 teaspoon
  • Curry leaves – 8-10 leaves
  • Oil – 2 tablespoons
  • Salt – to taste
  • Water – 1 cup
  • Fresh coriander leaves (chopped) – for garnish

Instructions:

  1. Prepare the Potatoes:

    • Boil the potatoes until soft but not mushy.
    • Peel and cube them into bite-sized pieces.
  2. Heat Oil and Temper:

    • In a deep pan or wok, heat 2 tablespoons of oil.
    • Add mustard seeds and allow them to splutter.
    • Add curry leaves and green chilies; sauté for a few seconds.
  3. Cook the Onions and Tomatoes:

    • Add sliced onions and sauté until golden brown.
    • Add the ginger-garlic paste and cook for 1 minute until the raw smell disappears.
    • Add chopped tomatoes and cook until soft and mushy.
  4. Add Spices:

    • Stir in turmeric powder, red chili powder, coriander powder, and salt.
    • Cook for 1-2 minutes, letting the spices blend with the onion-tomato mixture.
  5. Add Potatoes:

    • Add the boiled potatoes and mix well, ensuring the potatoes are coated with the spices.
    • Pour 1 cup of water and mix gently.
    • Simmer for 5-7 minutes, allowing the flavors to combine. Adjust water for desired consistency.
  6. Finish and Garnish:

    • Sprinkle garam masala and mix gently.
    • Turn off the heat and garnish with fresh coriander leaves.
