Ingredients:
- Potatoes (boiled and cubed) – 4 medium-sized
- Onions (finely sliced) – 2 medium-sized
- Tomatoes (chopped) – 2 medium-sized
- Green chilies – 2 (slit lengthwise)
- Ginger-garlic paste – 1 tablespoon
- Turmeric powder – 1/2 teaspoon
- Red chili powder – 1 teaspoon (adjust to taste)
- Coriander powder – 1 teaspoon
- Garam masala – 1/2 teaspoon
- Mustard seeds – 1 teaspoon
- Curry leaves – 8-10 leaves
- Oil – 2 tablespoons
- Salt – to taste
- Water – 1 cup
- Fresh coriander leaves (chopped) – for garnish

- Boil the potatoes until soft but not mushy.
- Peel and cube them into bite-sized pieces.
