Bombay Chapathi Sandwich

Bombay Chapathi Sandwich is a popular street food in Mumbai, India. It's a delicious and filling sandwich made with layers of spiced vegetables and chutneys, sandwiched between toasted chapatis. Ingredients:

For Chapatis:

  • 2 cups whole wheat flour (atta)
  • Water, as needed
  • Salt, to taste
  • Oil or ghee, for cooking chapatis

For Filling:

  • 2 medium potatoes, boiled and mashed
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1/2 cup boiled green peas
  • 1/2 cup boiled and diced carrots
  • 1/2 cup boiled and diced beans
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon chaat masala
  • Salt, to taste
  • 2 tablespoons oil
  • Fresh coriander leaves, chopped, for garnish

For Assembling:

  • Green chutney
  • Tamarind chutney
  • Butter, for toasting

Instructions:

1. Prepare Chapatis:

  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Let it rest for 15-20 minutes.
  2. Divide the dough into equal-sized balls. Roll each ball into a thin chapati using a rolling pin.
  3. Heat a griddle or tawa over medium heat. Place a rolled chapati on the hot griddle and cook until small bubbles appear on the surface. Flip the chapati and cook until brown spots appear on both sides. Apply oil or ghee while cooking chapatis. Repeat the process for remaining dough balls. Keep the chapatis aside.

2. Prepare Filling:

  1. Heat oil in a pan over medium heat. Add chopped onions and sauté until translucent.
  2. Add chopped tomatoes and cook until they turn soft and mushy.
  3. Add boiled and mashed potatoes, boiled green peas, diced carrots, and beans to the pan. Mix well.
  4. Add turmeric powder, cumin powder, chaat masala, and salt. Mix until well combined. Cook for a few minutes, stirring occasionally, until the filling is heated through. Remove from heat and keep aside.

3. Assemble Sandwiches:

  1. Take a chapati and spread a layer of green chutney on one side and tamarind chutney on the other side.
  2. Place a generous amount of the prepared filling on one half of the chapati.
  3. Sprinkle some chopped coriander leaves over the filling.
  4. Fold the chapati over the filling to close it, creating a half-moon shape.
  5. Heat a pan or griddle and toast the assembled sandwich on both sides with butter until crispy and golden brown.

4. Serve:

  1. Once toasted, remove the sandwich from the pan and cut it into halves or quarters.
  2. Serve hot with additional chutneys or ketchup on the side.
