Cheesy Potato Croquettes

Cheesy potato croquettes are delicious appetizers or snacks made with a creamy mashed potato mixture stuffed with cheese, coated in breadcrumbs, and deep-fried until golden and crispy.

Ingredients:

  • 2 large potatoes, peeled and cubed
  • 1 cup shredded cheese (cheddar, mozzarella, or any cheese of your choice)
  • 2 tablespoons butter
  • 1/4 cup milk
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and pepper to taste
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Oil for deep frying

Instructions:

  1. Cook the Potatoes:

    • Place the cubed potatoes in a large pot of salted water.
    • Bring the water to a boil, then reduce the heat and simmer the potatoes until they are tender when pierced with a fork, about 15-20 minutes.
    • Drain the potatoes and transfer them to a large mixing bowl.
  2. Prepare the Mixture:

    • Mash the cooked potatoes using a potato masher or fork until smooth.
    • Add the butter, shredded cheese, milk, chopped parsley (if using), salt, and pepper to the mashed potatoes. Mix well until everything is combined and the cheese is melted.
  3. Shape the Croquettes:

    • Take a portion of the potato mixture and shape it into a small cylinder or oval shape.
    • Repeat with the remaining potato mixture, forming all the croquettes.
  4. Coat the Croquettes:

    • Place the breadcrumbs in a shallow bowl.
    • Dip each potato croquette into the beaten eggs, ensuring it's well coated.
    • Roll the coated croquette in the breadcrumbs until it's evenly coated on all sides.
    • Place the coated croquettes on a plate or baking sheet.
  5. Fry the Croquettes:

    • Heat oil in a deep frying pan or fryer to 350°F (175°C).
    • Carefully add the coated croquettes to the hot oil in batches, making sure not to overcrowd the pan.
    • Fry the croquettes until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
    • Use a slotted spoon to remove the fried croquettes from the oil and transfer them to a plate lined with paper towels to drain excess oil.
  6. Serve:

    • Serve the cheesy potato croquettes hot with your favorite dipping sauce, such as ketchup, aioli, or ranch dressing.
