Cheesy Potato Croquettes
Cheesy potato croquettes are delicious appetizers or snacks made with a creamy mashed potato mixture stuffed with cheese, coated in breadcrumbs, and deep-fried until golden and crispy.
Ingredients:
- 2 large potatoes, peeled and cubed
- 1 cup shredded cheese (cheddar, mozzarella, or any cheese of your choice)
- 2 tablespoons butter
- 1/4 cup milk
- 2 tablespoons chopped fresh parsley (optional)
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 eggs, beaten
- Oil for deep frying
Instructions:
-
Cook the Potatoes:
- Place the cubed potatoes in a large pot of salted water.
- Bring the water to a boil, then reduce the heat and simmer the potatoes until they are tender when pierced with a fork, about 15-20 minutes.
- Drain the potatoes and transfer them to a large mixing bowl.
-
Prepare the Mixture:
- Mash the cooked potatoes using a potato masher or fork until smooth.
- Add the butter, shredded cheese, milk, chopped parsley (if using), salt, and pepper to the mashed potatoes. Mix well until everything is combined and the cheese is melted.
-
Shape the Croquettes:
- Take a portion of the potato mixture and shape it into a small cylinder or oval shape.
- Repeat with the remaining potato mixture, forming all the croquettes.
-
Coat the Croquettes:
- Place the breadcrumbs in a shallow bowl.
- Dip each potato croquette into the beaten eggs, ensuring it's well coated.
- Roll the coated croquette in the breadcrumbs until it's evenly coated on all sides.
- Place the coated croquettes on a plate or baking sheet.
-
Fry the Croquettes:
- Heat oil in a deep frying pan or fryer to 350°F (175°C).
- Carefully add the coated croquettes to the hot oil in batches, making sure not to overcrowd the pan.
- Fry the croquettes until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
- Use a slotted spoon to remove the fried croquettes from the oil and transfer them to a plate lined with paper towels to drain excess oil.
-
Serve:
- Serve the cheesy potato croquettes hot with your favorite dipping sauce, such as ketchup, aioli, or ranch dressing.
Enjoy these crispy and cheesy potato croquettes as a delicious appetizer or snack!
