  • 1 large eggplant (baigan), diced
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, finely chopped (adjust to taste)
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Prepare Vegetables:

    • Peel and dice the potatoes.
    • Dice the eggplant into bite-sized pieces. You can soak them in salted water for a while to reduce bitterness, then drain and pat them dry.
  2. Sautéing:

    • Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add finely chopped onions and sauté until golden brown.
  3. Add Spices:

    • Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  4. Add Tomatoes:

    • Add chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
  5. Cook Potatoes and Eggplant:

    • Add diced potatoes and eggplant to the masala. Mix well to coat the vegetables with the spices.
  6. Simmer:

    • Cover the pan and let the vegetables cook on low to medium heat. Stir occasionally to prevent sticking.
    • Cook until the potatoes and eggplants are tender. This may take around 15-20 minutes.
  7. Garnish:

    • Once the vegetables are cooked, add garam masala and stir. Adjust salt and spice levels according to your taste.
    • Garnish with fresh coriander leaves.
  8. Serve:

    • Aloo Baigan is ready to be served. Enjoy it with roti, naan, or rice.
