Aloo Dahi Wale

Ingredients:

  • 3-4 medium-sized potatoes, peeled and diced
  • 1 cup plain yogurt (curd), beaten

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon garam masala

Instructions:

  1. Boil Potatoes:

    • Boil the diced potatoes until they are just tender. You can either boil them on the stovetop or use a microwave.
  2. Prepare Yogurt Mixture:

    • In a bowl, beat the yogurt until smooth. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well and set aside.
  3. Cook Potatoes:

    • Heat oil in a pan. Add cumin seeds and mustard seeds. Allow them to splutter.
    • Add finely chopped onions and sauté until they become golden brown.
    • Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
    • Add chopped tomatoes and cook until they become soft.
  4. Add Spice Mix and Potatoes:

    • Add asafoetida, salt, and the yogurt-spice mixture to the pan. Mix well.
    • Add the boiled potatoes and gently stir to coat them with the yogurt mixture.
  5. Simmer:

    • Allow the mixture to simmer on low heat for about 10-15 minutes. This helps the potatoes absorb the flavors of the yogurt and spices.
  6. Adjust Consistency:

    • If the gravy is too thick, you can add a little water to achieve the desired consistency. If it's too thin, let it simmer for a bit longer.
  7. Garnish and Serve:

    • Garnish with fresh coriander leaves.
    • Serve Aloo Dahi Wale hot with rice or any Indian bread of your choice.
