Achari Paneer
Achari Paneer is a flavorful Indian dish where paneer (Indian cottage cheese) is cooked in a tangy and spicy pickling spice blend. Here's a simple recipe for Achari Paneer:
Ingredients:
- 250g paneer, cubed
- 2 tablespoons mustard oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon fennel seeds
- 1 teaspoon nigella seeds (kalonji)
- 1/2 teaspoon fenugreek seeds (methi)
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 tomatoes, pureed
- 1 tablespoon tomato paste (optional for extra richness)
- 1 tablespoon achari masala (pickle spice mix, available at Indian grocery stores)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- Salt to taste
- 1 tablespoon yogurt
- Fresh coriander leaves for garnish

Prepare Achari Masala:
- Dry roast mustard seeds, cumin seeds, fennel seeds, nigella seeds, and fenugreek seeds. Grind them into a fine powder to make the achari masala.

- In a bowl, mix the cubed paneer with 1 tablespoon of achari masala and yogurt. Allow it to marinate for at least 15-20 minutes.

- Heat mustard oil in a pan. Once hot, add the marinated paneer cubes and cook until they turn golden brown. Remove the paneer from the pan and set aside.
