Aloo ka Bharta is a flavorful and rustic Indian dish made with mashed potatoes and a blend of spices. It's a comforting dish often enjoyed with roti, paratha, or rice. Here's a simple recipe for Aloo ka Bharta:

Ingredients:

  • 4 large potatoes, boiled and peeled
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 1-2 green chilies, finely chopped (adjust according to spice preference)
  • 1 tablespoon ginger-garlic paste
  • 1 large tomato, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Boil Potatoes:

    • Boil the potatoes until they are fully cooked. Once boiled, peel and mash them using a potato masher or fork. The consistency can be slightly chunky for added texture.
  2. Sautéing:

    • Heat ghee or oil in a pan over medium heat. Add cumin seeds and let them splutter.
    • Add finely chopped onions and sauté until they become translucent.
  3. Add Ginger-Garlic Paste:

    • Add ginger-garlic paste and chopped green chilies. Sauté for 1-2 minutes until the raw aroma disappears.
  4. Add Tomatoes:

    • Add finely chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
  5. Add Spices:

    • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Combine with Mashed Potatoes:

    • Add the mashed potatoes to the pan and mix thoroughly with the spice mixture. Ensure that the potatoes are well coated with the spices.
  7. Cooking Bharta:

    • Cook the mixture on low heat for 8-10 minutes, stirring occasionally. This allows the flavors to blend well.
  8. Garnish:

    • Garnish with fresh coriander leaves.
  9. Serve:

    • Aloo ka Bharta is ready to be served. Enjoy it hot with roti, paratha, or rice.

Tips:

  • For a richer flavor, you can add 1/2 cup of yogurt or sour cream to the bharta.
  • You can adjust the amount of chili powder to your desired level of spiciness.
  • Aloo ka bharta can be made ahead of time and stored in the refrigerator for up to 3 days.

Feel free to adjust the spice levels and add a dash of lemon juice for extra tanginess if desired. Aloo ka Bharta is a simple yet delicious dish that captures the essence of home-cooked comfort food.
